In 2024, I went on the Paleo diet as part of the 75 Hard, and found it difficult to find a dessert that was sugar free, dairy free and oat free so I made my own. Mini Melanie was founded in 2015 by sisters Melanie and Diana Moss. Melanie grew up baking with their grandmother, and her hobby steadily grew into an obsession. While attending Northwestern University, Melanie studied in Paris and was Sous Chef at Cours de Cuisine atelier. She later attended the Institute of Culinary Education and honed her craft in the Michelin-starred kitchens of Babbo and Blue Hill at Stone Barns, where she was Pastry Sous Chef. Melanie’s desserts have been recognized in the 2016 New York City Michelin guide, and in 2018, Melanie became Champion of a special-themed chocolate competition on Food Network’s CHOPPED.

The Evercake concept started as I was ordering flowers online while skimming Pinterest for my toddler's birthday cake. I wanted a beautiful cake that I could add to a cart and have delivered. Why didn't this exist? A few months later, The Evercake was born. We are different in that we are strictly buttercream based (no overworked fondant here). Our recipes are tried and true, slightly less sweet, and with designs aimed to be worthy of your celebrations. We don't have a traditional storefront with overhead to worry about it, which means we don't have to mark up our cakes to account for this.
