My youngest daughter, was diagnosed with an Auto-Immune Disease, called Eosinophilic Esophagitis (EoE) just after her 1st Birthday. Prior to the diagnosis she suffered from constant vomiting. Through endoscopies and food elimination we determined that she could not eat anything that contained Gluten, Dairy, Eggs and a few Fruits and Vegetables. Since her diagnosis, I began to develop recipes that would not only taste good but, look good too. Most Allergen Free recipes that I found contained other ingredients that she could not eat and if she could, she didn’t like the consistency. So once it came to her 2nd Birthday I was going to be ready!

I started my cookie adventure in the spring of 2017, but the desire to learn this art started long before that. As soon as I got a @pinterest account (back when you had to be invited to join!) I started filling my boards with beautiful cookies. I always thought decorated cookies were so cool, and I wanted to learn to do it myself. Well, not only for myself, but for any future children I may have. I wanted to be the mom who threw the best parties with the coolest desserts.
