Professionally, Lindsay has been "doing this" since 2005, when she realized, while still at UNC Chapel Hill, she wasn't cut out for a desk job. From Chapel Hill, to The Culinary Institute of America in Hyde Park, NY, where Lindsay prepared herself with a Baking and Pastry Degree. Fortunately, after a year in the "Big City," Lindsay and her family realized "there's no place like home" and returned to Hendersonville, where, after a brief hiatus, she has established Gâteaux.

Education, in combination with her desire to stay current with trends in the floral industry are what set her apart. Choy is a former member in the Blue Ridge Chapter of Ikebana, the Ikebana International of Asheville, and is a former member of NC State Florist Association.

Homewood is a beautifully restored 1920s stone manor located in Asheville's post-Victorian historic district of Montford. The elegant castle was originally built as a private home. The elegance of the 1920s luminesces from original wrought iron chandeliers and alabaster sconces, casting graceful lighting from the 20-foot ceilings of the Great Room to the original hardwood floors, cherry walls, and grand Appalachian stone fireplaces. Some of my favorite performances were touring renowned concert halls in Austria including St. Peter's Cathedral and Melk Abbey. The Barn is the perfect setting for a relaxing and comfortable celebration, whether it’s a rustic elegant wedding for 50 or 500 guest. The Lodge is a 5,000 square foot Conference Center.
